Try this with produce from your own garden!

Raw Beet and Arugula Salad

Ingredients:

Salad:

Large handful of arugula

1 bunch Beets – red and/or yellow

1 Orange, skin and membranes removed
1/2 medium Red Onion
Feta Cheese, crumbled (one handful, more or less)
Roasted Macadamia Nuts

Dressing:
Avocado oil (or oil of your preference)
Lemon
Mustard
salt & pepper
Directions:

  • Remove leaves from beets and peel. Slice thin with a mandolin or very sharp knife. (You can roast the beets in the oven, but raw is more nutritionally dense—and tasty!
  • Toss the arugula, sectioned orange, and red onion together in a large bowl. Refrigerate.
  • Roast macadamia nuts in oven, 350 deg. F for 10 minutes, turn, then another 10 minutes, or toast them in a frying pan until they smell just right!
  • Half the onion and slice thin.
  • Mix oil, lemon and mustard, salt/pepper to taste; add the dressing to bowl of sliced beets and mix. Set aside.
  • Just before serving, toss all ingredients together.
  • Enjoy!
